This gazpacho is hands down our most popular summer soup! It’s cold and refreshing, and right now cantaloupe is at its peak and SO delicious!
serves 6
1 ripe cantaloupe, seeded, peeled and cubed
1 European cucumber (the long, seedless one) peeled and chopped
2 cloves garlic, peeled and chopped
1/2 teaspoon of fresh jalapeño, chopped (optional)
juice of one fresh lime
1 cup fresh orange juice or pineapple juice
In a blender or food processor, blend all ingredients until smooth or a little chunky. Whichever you prefer. Salt and pepper, to taste. Chill for at least 2 hours.
This soup is delicious topped with chopped chives and/or bacon!
