RECIPE: Black Bean Burgers

Serves 4

2 (14-ounce) cans black beans, drained, rinsed, and patted dry

1 Tablespoon extra virgin olive oil, plus more for cooking burgers

3/4 cup finely chopped bell pepper (1/2 of a pepper)

1 cup finely chopped yellow onion (1/2 of a large onion)

3 garlic cloves, minced (about 1 Tablespoon)

1 and 1/2 teaspoons ground cumin

1/4 teaspoon onion powder

1/2 teaspoon garlic powder

1/4 teaspoon garlic powder

1/2 cup gluten-free Panko bread crumbs

1/2 cup feta cheese

2 large eggs

pinch salt + pepper

Heat oven to 350 degrees. Drain beans and spread on a cookie sheet and bake 10 minutes. Heat olive oil and sauté your onions and peppers until soft.

In a mixing bowl, add beans and onion mixture. Throw in all other ingredients and mash with a fork (or with your hands) until slightly mushed and chunky. Form burger patties.

Heat a touch more olive oil in your sauté pan, and cook burgers three to four minutes per side on low-medium flame.

Serve on your favorite burger or slider bun. Or go bun-less and top with guacamole or slaw.
