My obsession with Israeli food continues with this delicious, grain-free summer salad! I LOVE tabouleh, but I’m making a more conscious effort to eat less grains and more veggies. This does the trick! I love grilling a simple piece of fish and serving it on top of this salad.
Tales of a Wannabe Athlete
My friends and family know that I have a penchant for signing up for athletic challenges that are way beyond the norm for a Jewish Princess from Atlanta. I am not particularly athletically inclined, but since I was little, I have dreamed of being strong, fast and fierce. Unfortunately, I may have not been meant for Olympic glory probably because I was the girl always asking about snack time and not particularly good about following the rules. My family still loves to retell the story of my father driving to my boarding school in Massachusetts for my championship Ice Hockey game only to find that I had been retired to the penalty box for the entire game after hitting a girl with my hockey stick. She was too close to me, Jeez!

Make This Delicious Green Gazpacho!
Green Gazpacho
Serves 4
*2 green peppers, seeds out, chopped
*2 cloves garlic, chopped
*4 tomatillos, husks off and chopped
*1/2 pound of green grapes
*2 avocados, pits removed
*1/2 jalapeno, chopped (optional)
*1/2 cup cilantro, chopped
*2 cucumbers, peeled and seeds removed.
*salt and pepper
This recipe is so easy! Puree everything in a food processor or blender and salt and pepper to taste. Garnish with fresh cilantro or mint!
