RECIPE: Souper Power Almond Butter Bites

makes roughly 36 bites

Need a healthy snack that's full of plant-based protein and are good on the go? Try out my SOUPER POWER ALMOND BUTTER BITES! They're also gluten-free and vegan! 

2 cups gluten-free rolled oats

2 cups unsweetened coconut flakes

1 cup hulled raw hemp seeds

1/2 cup oat flour

1/2 teaspoon kosher salt

1 1/2 cups no stir almond butter

1/2 cup honey

1 teaspoon pure vanilla extract

1 cup mini vegan chocolate chips

1 cup sour dried cherries

Preheat oven to 350. On a baking sheet, toast the oats and coconut flakes until coconut is slightly brown, about 10 minutes. Stirring as needed.

Place oats and coconut in a mixing bowl to cool. Add salt and stir. Add all other ingredients and mix until combined.

Prepare a baking sheet lined with parchment or wax paper. Scoop a heaping tablespoon of the mixture and roll into a ball. Chill for an hour in the fridge.

Transfer to a container or jar with a lid. Store in the refrigerator!
