THE MIRACLE OF DELEGATING

...5:00 AM the Wednesday before Thanksgiving and I truly am experiencing a first in my restaurant life.
I usually pull a 24 hour day to get everything ready for our Thanksgiving take-out and by now am just mopping up so the morning crew can prep for lunch. This year I actually went out on a limb and met with my evening cook, Julio and talked about how he could be more involved. This is sort of a joke, because he is, in my opinion more qualified for my job than I am! Low and behold, I walked out the door at 8:30 last night which was pretty scairy for me. (Did I mention, I'm an Aries and am not the best at giving up control?)
I arrived at 4:30 planning to put all the orders together and I walked into the most beautiful sight ever. The walk In is pristine. Each side dish is meticulously packaged and labled in an orderly fashion and the kitchen is spotless. This is the kind of thing that makes people like me want to cry.
The moral is, let go. Let people do their job. Trust a litlle and you just may be pleasantly surprised.
I can tweek around the resaturant, straightening pictures and doing the stuff I normally do until my staff gets in. That is until Starbucks opens because I formerly mentioned what happens if the Lattes don't show up.
